1 package of frozen organic edamame beans (10 ounces and thawed), ¼ cup of chopped parsley, 2 finely chopped shallots, 5 cloves of finely chopped garlic (divided), 2 tablespoons of fresh lemon juice, 2 tablespoons of extra virgin olive oil, freshly ground black pepper and sea salt to taste.
Here’s how to do it:
In a small skillet, heat the oil in a medium high heat. Put the shallots and half of the finely chopped garlic to get sautéed for 2-3 minutes. If they became soft, remove from heat.
Go to the food processor and place edamame beans, parsley, lemon juice and sauteed shallots on it. Add also the half of finely chopped garlic and blend them all until smooth and creamy. Sprinkle sea salt and ground black pepper to taste.

6 to 8 slices of sprouted whole grain bread

The oven must be preheated to 400 degrees. Trim the crust off on each piece of bread by using kitchen shears. Cut them diagonally to form triangles. Brush olive oil on the top on both sides by a basting brush. Season with salt.
Bake the bread in the oven for 10-12 minutes, until it’s brown and crispy. Remove from the oven and spread your edamame hummus on every slice of bread. You may put black olive slices on the top and serve.
